MEXICO: Few know Mexico without conjuring up images of excellent Mexican food. Mexican cuisine is a fusion of Mexican native foods, such as corn, beans, avocados, tomatoes and chili peppers, along with the rice that the Spanish brought to Mexico upon the Spanish conquest of the Aztec Nation in 1521.
